Fish Taco Tuesday

I usually serve tacos with a salad.

One of my favorite items from Trader Joe's is the package of marinated Mahi Mahi filets (in the frozen section). They're delicious, healthy, and so easy to make, that I end up having them about once a week. I just put them in the refrigerator in the morning and they're ready to go by evening. I used to serve them with brown rice and a vegetable, but Lucia recently told me she uses them to make fish tacos and I've been completely obsessed ever since. It's such a quick, easy, weeknight dinner that Gabe and I both love. What's your favorite quick meal for weeknights when you don't have much time to cook?

That looks delicious!
For quick meals we do breakfast for dinner, baked potatoes, or salad. Those are our usual go-to meals!

Yum! These look delish!
For something really quick I usually buy the Trader Joes frozen brown rice, which only takes 3 minutes to make and then I'll do a quick chicken terriaky.

I love fish tacos, that looks great.

This is totally not healthy, but the BF and I are recently obsessed with Ballpark brand's Angus beef hot dogs. They take minutes to grill and taste better than any ballpark dog we've ever had. I make a fresh veggie relish for a topper while he grills and dinner is d o n e.

We just made fish tacos for the first time ever last night! They were amazing! YUM!

The only thing I didn't like were the tortillas we used. Do you have any recs for good ones?

I love blue corn tortillas! Of all the times I've been to TJ's, I can't believe I haven't tried these. I just sent this post to Jimmy, so we will be having fish tacos this week!

Taco nights are always a great time, my boyfriend and i usually have a taco night every other week, and it's soo good! But living in LA I'm always so tempted to just go out and eat mexican food instead of trying to make it at home. The mexican food around here is Unreal!!

I completely head for the chicken tacos when I don't have much time. These look great, so maybe it's time to switch it up! As an aside, many of the blogs I've looked at this AM are talking about food...happy first day back after the weekend. I'm starved!

YUMMY!!! Those look amazing! I love how you used the different tortillas. I've been meaning to try the sundried tomato ones!

I think my favorite quick weeknight dinner would be turkey sausage, onions and peppers on a wheat hoagie roll. Yum!! Simple but delicious and easy! :)

Ooh that looks positively delicious. Very nice. I'll have to check out the freezer section for the marinated fish! They sound perfect for an easy meal.
For quick meals, I like to make broiled, open face sandwiches. While the bread, cheese and some topping are broiling, I'll saute onions and mushrooms then serve it all with spicy mustard.
I'll have to try the fish taco idea. I've never actually HAD fish tacos.

I usually do not eat packaged foods. My quick meal is a dish of roasted sweet potaoes with garlic, cumin, coriander served with a dash of pumpkin seed oil. Quick, freshly prepared and tasty;-)

ok, this might be a little random but since you got all your ingredients at Trader Joe's you will probably understand :) My mom and I are obsessed with Trader Joe's... I think our favorite one is the one in crystal cove!! If I could only go to one grocery store for the rest of my life it would be Trader Joe's :)

Those tacos look amazing, by the way!!

Gosh I've missed your blog! Glad I am back home and can catch up :) We just got a Trader Joe's in Nashville last year! It made my year when it opened because I had gotten my taste of it while visiting my fiance in CA. I am getting these next time I go... thanks for the tip!
