Chicken Piccata






I used Giada's Chicken Piccata recipe last night and it was fabulous! I had never made chicken piccata before and it turned out perfectly although I didn't think the pictures quite did it justice. Giada's cookbooks have become my go-to for fresh, easy Italian meals. I also roasted some potatoes and made Broccoli slaw with toasted almonds (one of the few ways I can get Gabe to eat broccoli). I used this recipe from Smitten Kitchen, but substitute broccoli for the zucchini. I would probably love it with zucchini too, but the fist time I was buying the ingredients to make it, I accidentally bought broccoli instead. We loved it so much, I just stuck with it. What are your favorite cookbooks for weeknight dinners?

Oh that looks great! I have a couple of cookbooks from a series called "Calling all Cooks", it's really popular in the south. It has a ton of easy go-to meals so I love them!

Yummy! Glad that Gabe likes it too. Wish I could give you some cookbook ideas, my husband would love that too. I need to start cooking more in the kitchen. :)

I've made this before and I love it- healthy and really simple! I definitely share the love regarding Giada. I have all of her cookbooks. Another one of my favorites for quick, healthy weeknight meals is Mark Bittman.
