Lobster Mac & Cheese With Truffle Oil




Ever since I bought a bottle of Truffle Oil, I've been dying to make Lobster Mac & Cheese with Truffle Oil and Valentine's Day seemed like a great time to test it out.  I had never cooked with lobster before so this recipe forced me to step out of my comfort zone (which was one of my resolutions).  I have to admit I was impressed with how it turned out.  It was rich, creamy, cheesy, and so delicious.  I combined a few recipes, using this one to cook the lobster tail and this for the mac and cheese (I used panko bread crumbs instead of homemade).  And even though this wasn't the main course for our Valentine's Day dinner (we grilled steaks as well), it definitely stole the show.

I went out to eat for valentines day and the restaurant had a lobster risotto and a lobster mac n cheese.. I went for the risotto so I guess I'll have to steal your idea and make this at home!

YUM - i'm a huge lobster fan - but over the summer - there was a lobster sale - and we literally had lobster dinners for 2 weeks straight - i'm lobstered out till the summer :o)

Oh whoa...did you say truffle oil? Val. Are you hooked on the stuff? Chef had me and a friend into one of his restaurants a couple years ago and one of the dishes he made us was lobster risotto w/truffle - oh hell they about had to haul us out of the building. That stuff is so good. I had mac and cheese w/ketchup last night - somehow grossly paling in comparison to this treasure you've got going here...
