Chicken and Parsnip Soup







After coming down with a horrible cold last week, I wanted some homemade soup without all the "homemade" effort. I found this recipe for Chicken and Parsnip Soup in my November issue of Cooking Light Magazine and it was just what the doctor ordered. It was easy to prepare, cooked quickly, and produced a delicious, healthy meal with lots of leftovers. I added green beans, boiled and shredded chicken breasts (instead of a rotisserie), additional chicken broth, and grated Parmesan cheese. It was the perfect meal to help me recover. What's your favorite meal when you're feeling under the weather?

This is perfect, I should make this tonight because we have some leftover roast chicken! I have a cold as well and soups are the best.

i'm sick now - and i could really use that soup - my Mom's chicken soup is always the best! - to this day - my Mom will drive any amount of miles to bring her soup to me and my brother when we are sick :o)

Sorry to hear that you've been 'under the weather'... I hope you're now feeling better.

The soup looks very warm, filling, and soothing. Soup is always my go-to meal when I'm not feeling well.
