Chicken and Parsnip Soup
After coming down with a horrible cold last week, I wanted some homemade soup without all the "homemade" effort. I found this recipe for Chicken and Parsnip Soup in my November issue of Cooking Light Magazine and it was just what the doctor ordered. It was easy to prepare, cooked quickly, and produced a delicious, healthy meal with lots of leftovers. I added green beans, boiled and shredded chicken breasts (instead of a rotisserie), additional chicken broth, and grated Parmesan cheese. It was the perfect meal to help me recover.
