Italian Wedding Soup




I've had Italian Wedding Soup out of a can a thousand times in my life, but I had never thought about making it at home.  Then I saw Nikki's post and couldn't get it out of my mind.  Since it was cold and rainy on Sunday, it felt like the perfect time to try it out and it was the perfect rainy day meal.  I used this recipe for the meatballs (I used ground turkey) and this one for the soup, substituting pasta with white kidney beans (per Nikki's suggestion).  I love finding a soup that's flavorful and hearty while still being healthy and this was all of the above.  What's your go-to rainy day meal?

i've only had italian wedding soup once in my life and i loved it! this looks so delicious. i love that it's hearty and healthy. too many soups are watery and under-filling.

My go to rainy meal is probably spaghetti with meat sauce and garlic bread...not the healthiest but tasty!

it's grey and gloomy here today and makes me want to go home and cook this up! i love meatballs and this looks amazing!

comfort food for me is using something italian...and i love it baked with melted cheese. you know, incredibly healthy! haha

I love any type of soup on a rainy day, and this looks healthy and delicious! Yesterday, I made potato, leeks, and garlic (all roasted first... Mmmm) soup. My ultimate rainy day meal would include soup, with Grilled cheese sandwiches on the side =).
