Slow Cooker Chicken Tortilla Soup




Last week was cold and rainy in Los Angeles and the perfect time to pull out my crock pot (as mentioned here) for a season filled with homemade soups, chili, and other comfort foods. I started with this recipe for Chicken Tortilla Soup that proved simple, hearty, and full of flavor. I altered the recipe a little by putting the frozen chicken breasts directly into the soup, then shredding them before serving. I added celery and red peppers and we topped it with cheddar cheese, sour cream, and multi grain tortilla chips (instead of making my own). This will definitely be a regular in our dinner rotation during the upcoming months. What are your favorite slow cooker recipes?

That's what I need for lunch today. It is chilly... no rain yet but overcast and a bit depressing... That soup would definitely cheer me up!

I almost forgot to bring out my crockpot now that its cooler out.....such a great way of cooking on those chilly days...love coming home from work and smelling the dinner done!!!

Looks good, but I don't like pieces of chicken in soup...I also have only used my crockpot once for a super bowl party...I think I made bonelss ribs

Definitely trying this over the weekend. I have a slow cooker, but don't use it nearly enough, and making soup is on my to do list. I love it, but just never make it. Something about preparing it scares me, but I think I can handle a slow cooker.

I'm not even afraid to say that I love my crockpot. I find stuff just to cook in it. It is THAT darn good!

Can't wait to try this. I love any type of Mexican food and tortilla soup is a personal fave. I love putting avocado on top. mmm!
