Slow Cooker Chicken Tortilla Soup

Last week was cold and rainy in Los Angeles and the perfect time to pull out my crock pot (as mentioned here) for a season filled with homemade soups, chili, and other comfort foods. I started with this recipe for Chicken Tortilla Soup that proved simple, hearty, and full of flavor. I altered the recipe a little by putting the frozen chicken breasts directly into the soup, then shredding them before serving. I added celery and red peppers and we topped it with cheddar cheese, sour cream, and multi grain tortilla chips (instead of making my own). This will definitely be a regular in our dinner rotation during the upcoming months. What are your favorite slow cooker recipes?

That looks delicious and easy to make :) I love Crock Pot cooking, one of the few things I can do and not screw up!

That's what I need for lunch today. It is chilly... no rain yet but overcast and a bit depressing... That soup would definitely cheer me up!

Definitely trying this over the weekend. I have a slow cooker, but don't use it nearly enough, and making soup is on my to do list. I love it, but just never make it. Something about preparing it scares me, but I think I can handle a slow cooker.

Have a great day!

Ps- this post is making me ready for lunch at it is only 9am!

We are definitely trying this soon! We like to slow cook various forms of chicken in the cock pot the most... bbq chicken is always so tasty that way!

That recipe looks mouthwatering! I need to invest in a crockpot...

Slow cookers sound like a good idea. The meat has time to marinate and take the flavours well. Must try this

Jenn from Much to My Delight said...

I think it's time I invest in a slow cooker. It must save so much time at night not to have to chop and stand over the stove. That chicken tortilla soup looks dy-no-mite!
