Quick Black Bean Soup

Over the last few weeks I've been settling in to the cooler weather, pulling out my crock pot, making soups, pastas, and other comfort foods. Every year around this time, I pull out my sweaters/jackets, stock up on hot apple cider, and cook lots of warm, comforting meals consumed with glasses of red wine. Soup has long been one of my favorite cold weather meals and I'm always trying new recipes to find the perfect concoctions. This was my first attempt at making black bean soup and Gabe's first time eating it. We were both pleasantly surprised with the warm, rich, hearty feel of this recipe that we couldn't help going back for second helpings. I used this recipe from Cooking Light, added celery (much to Gabe's dismay), and will certainly be making it again soon.

Love black bean soup and this could not be any easier. In fact I just bought a can of Amys black bean soup and sometimes add cilantro, onions, cheese etc. but next time I will try it with just black beans. And don't you just love cooking light recipes? I made a butternut squash lasagna last night from cooking light. Thanks for sharing!

Valerie,

I love soups like this! I've never tried a black bean from scratch (why? - i don't know), but they are certainly a fave. You may have solved a dinner debacle this week...now that I'm back in the house AND the garage. oy
