These cookies were a childhood favorite of mine. My mom and I would make them whenever we wanted a homemade dessert but didn't feel like spending hours in the kitchen. They have only four ingredients, take about 5 minutes to prepare (8 minutes to bake), and taste amazing. It's definitely the easiest dessert I've ever made and one of the most delicious.
Flourless Peanut Butter Cookies
1 cup peanut butter
1 cup white sugar
1 egg
1 cup white sugar
1 egg
1 tsp vanilla
Preheat oven to 350 degrees F (180 degrees C).
Combine ingredients and drop by teaspoonfuls on cookie sheet. Bake for 8 minutes. Let cool.

Valerie I'm all buzzed out on the glorious summer weather we had and am just going to bed...these cookies look divine and I kinda feel like turning on the oven (despite the heat - yay!) to bake some right now!! I think this is going to be breakfast in a few short hours. YUM!!

these sound a lot like the peanut butter cookies my mom always makes! they are her favorite and i used to always complain (bc i wanted cookies with chocolate in the mix!) but now i have grown to love them!!!
