Southwestern Quinoa Salad





As I mentioned here, I've been experimenting with quinoa recently due to it's light, healthy, nutritious nature. This week I used the red variety to make a Southwestern Quinoa Salad. I chose this recipe because it was simple and straightforward and added an avocado and a bit of red wine vinegar. It exceeded my expectations and was the ideal light but satisfying weeknight meal.

This salad was awesome! But if someone tries to tell you that there is parsley in it don't believe them, its really cilantro. Even so, I can't wait to have it again!

Yes! Quinoa = amazing. I love how you're finding different ways to use it and sharing w/us. I would most def eat this...and maybe will this weekend now that it's perfectly warm and sizzly outside. Yay!!

Valerie-I just made the southwestern quinoa and it's so easy and delicious! I didn't have an avocado but next time I will add it. I also added extra green onions, and some ground cumin and coriander. I didn't have red quinoa but white quinoa worked great. Thanks for sharing!
