Mushroom, Goat Cheese, and Truffle Oil Pizza







I've recently become completely obsessed with truffle oil and purchased some on Amazon.com.  I've been experimenting with it (mostly on roasted vegetables, which is incredible) and decided to try it on pizza over the weekend.  In loosely trying to recreate a pizza I'd had a Sonoma Wine Garden, I came up with this magnificent creation.  It was everything I'd hoped it would be and more.  This might be my new favorite pizza.


Mushroom, Goat Cheese, and Truffle Oil Pizza
First I sautéed 15 ounces of chopped mushrooms in a little truffle oil (a small amount goes a long way).  I used Trader Joe's wheat pizza dough, rolling it out and cooking it for 5 minutes on 450º.  Then I brushed the crust with truffle oil and added the sautéed mushrooms, about 4-6 ounces of goat cheese, and 4-6 ounces of grated fontina cheese.  I put it back in the oven for another 10 minutes.  When it was done cooking, I sprinkled it with a little more truffle oil and a dash of sea salt.
