Vegetable Challenge

After watching Oprah's episode about the vegan challenge, I've been trying to incorporate more vegetables into my diet.  I'm certainly not cutting out meat or seafood, but I do see the benefit of adding more greens to my meals ("leaning in" as Oprah calls it).  I do love vegetables, but I generally eat the same ones over and over and get tired of them quickly.  Here are a few ways I've been trying to mix it up with new varieties and recipes (as seen here with my spinach and mushroom enchiladas).  What are your quick/delicious ways to prepare vegetables?

I get totally stuck in veggie ruts. Right now snow peas have been my go to. Sautéed. I also love grilled asparagus.

i absolutely loooove roasting veggies i crank up the oven, spritz with olive oil and balsamic and throw whatever i have into the oven for about 25 mins. it is delicious! i love doing it with squashes, tomatoes, and sweet potatoes

i like to use the microwave for time - broccoli, peas, squash, sweet potato...yay for veggies!!

I do a tofu stir-fry every week! Roast vegetables are another staple as well and I've lately been trying to cook Indian inspired dishes (lentils, cauliflower).

I find it hard to incorporate new veggies into my diet as well. I actually just tried making a tuna/veggie pita last night for dinner and it was delish! It had hummus on it too, which always seems to give more taste to veggies!

So admission time: I eat salads, grill veggies, or make veggie lasagna. Sometimes I roast brussel sprouts/carrots/onions around chicken or beef (but there's the meat factor). Perhaps it's time to get a bit more inventive...like dip them in chocolate. HA!

Even as a vegetarian I find myself not eating as many vegetables as I should. My favorite go to is to lightly sautee squash, zuccini, asparagus green onions and mushrooms with italian seasoning and garlic and serve over brown rice. Yum!

When I make pasta I add spinach, purple onion and mushrooms! The tomato sauce is obviously veggie too! Also when I make eggs I add green pepper and the above vegetables! It's delicious! Keep up the green!

love this Valerie! I'm good about eating my veggies, but I've been trying to mix it up too - thanks for the ideas! My favorite is always stir frying with olive oil and garlic, but now I'm getting into roasting veggies. Have you tried making kale chips yet? They are really easy and delicious (and super healthy of course) xo

I watched that Oprah episode as well! About 2 months or so ago, I decided I would try to go a month without any meat, and I lasted the full month, but I didn't want to continue. lol I love vegetables, and often swap out vegan burgers for the real thing, but I'm not ready to give up meat entirely!

All these vegetables look yummy!

I love to grill/saute a ton of vegetables, and use the extras for sandwiches, a quick healthy fried rice, scrambled eggs, salads, etc.

Another thing that I've been doing a lot is roasting them, with a little olive oil and s&p... and then topping with Parmesan.

A lot of times, I'll roast, steam, or saute 'em, and then simply top with marinara sauce & mozzarella or Parmesan and pine nuts. A quick, filling lunch (or dinner!).

my favorite thing to do in the summer is put zucchini and squash on a skewer, brush butter on them and grill them. oh my gosh. heaven.

Baby heirlooms and brussel sprouts are amazing they are both regulars on our T Joes run. I also love grilled zucchini wedges! I marinate them in lemon zest, olive oil, garlic powder, S&P. Then grill them up! SO yummy. xo

This is great...I have been doing this for a while..just to be healthier but I can also use some new ideas for veggies. Just saw a great dish on Smitten Kitchen for asparagus. And we cook with tofu all the time! Love this....

Today, I went to the beachfront with my kids.
I found a sea shell and gave it to my 4 year old daughter and said "You can hear the ocean if you put this to your ear." She put the shell to her ear and screamed.
There was a hermit crab inside and it pinched her ear.
She never wants to go back! LoL I know this is totally off
